Tolson Sherwood - Proprietor and Executive Chef
Tolson spent several years training in Switzerland before returning to Ireland to run his own restaurants. He has many years experience of both restaurant and event catering and has family associations with hotels and restaurants throughout Ireland. He divides his time between client meetings, menu planning and cooking.
Lynda Sherwood - Proprietor and Planning Co-ordinator
Perhaps you have an idea of what you want but don't know how to achieve it. That is where Lynda comes in - trained as a home economist she is available to help with all aspects of the planning for your event. She will meet you at your home or at your chosen venue to discuss your requirements in detail.
Richard Smith - Head Chef
Richard has worked in many kitchens throughout Europe perfecting his skills. He has many years experience in cooking for events of all kinds.
Catherine Craythorne - Function Manager
Catherine is the person who will look after the front-of-house side of your event, managing staff and taking care of last-minute details. She had her own restaurant for many years before joining us and has a wide knowledge of food and wines.
Jayne Bittles - Event Administrator
Jayne came to us from a hotel background and is now based in our office. She is one of the first people you will speak to when you contact us. She will be happy to assist you in the co-ordination of your event and her eye for detail will ensure every eventuality is anticipated.
